Can my pink 'once between turns' power trigger on my own turn?
Stonemaier staff ruled this several times and the rulebook says pink powers trigger on opponents' turns.

No. Pink powers activate only on other players' turns, so your own turn, round-end and game-end phases never trigger them. You may use each pink power once between your own turns and keep it available until a legal moment.
