With a Hacienda and a Construction Hut, can I take a quarry instead of the Hacienda's face-down tile?

No. The Hacienda's extra tile is always a face-down plantation, not a quarry. The Construction Hut lets you take a quarry only as your regular pick. A 2011 English wording seemed to allow the swap, which readers treat as a translation error.
