What if there are not enough goods left for everyone to produce?
The rulebook states this directly, and forum players agree.

Production goes clockwise from the Craftsman and each player takes what is left. If a kind is exhausted you get none of it and cannot substitute another kind, and the Craftsman's bonus good comes last, so it may be gone.
