What happens to dice that do not match the color of my chosen peril option?
The rulebook states this in Gather + Roll Dice and Use Skills.

Discard them immediately — only dice of the option's color (and heroic dice) can stay in your pool. In a peril you also only roll the dice matching the chosen option's color.
