Does a dodge cancel the whole attack or just one hit?

One hit only. After hit locations are drawn you pick one hit to turn into a failed roll; every other hit still deals damage, so you can dodge the first hit and still take the second. Dodge works against any attack profile, including one with an after-damage effect — that effect simply doesn't happen for the dodged hit.
