Once a die covers a symbol on a Bomb Card, do I still have to satisfy it?
Several players agree, quoting the designer; the rulebook only says symbols refer to adjacent dice.

No. Only the visible icons matter when you place a die; covered ones are irrelevant. On a card with a number or colour link, the middle die can match either neighbour's number or colour.
