During Sustenance, when can I pay Grain, Animals or Wood instead of Food and Peat?

Only for what you are missing. Pay Food (and Peat in November) first; each missing Food can be covered by 1 Grain, then by 1 Animal once Grain runs out, and each missing Peat by 1 Wood or Timber. Peat still on a Moor tile does not count; it must already be in your supply. Anything still unpaid costs 2 VP per item, and posters read the substitution as mandatory, so you cannot keep Timber and take the penalty instead.
