How does Bremen work: the Moor option, the 9 Food and 30 Food sales?

The 9 Food needs 2 Animals of the same type, and the 30 Food needs one each of Summer, Winter and Leather Wear (excess over your 30 cap is lost). The Moor option removes a Moor tile (any side, its Peat lost to the supply) for no Food, but counts as a sale and avoids the end-game penalty. Selling 1 Timber and 2 same-type Animals gives 14 Food.
