Can I convert or use grain and vegetables that are still growing on my fields?

No. Only goods in your personal supply can be converted to food, fed to dwarves or counted for furnishing effects. Crops on a field stay there until the Field phase of a harvest moves them to your supply, although they still score at the end of the game.
