In Part 1, must bread be assigned to a guest immediately, or can you hold it?

You mark it right away, but you choose where. Part 1 uses no bread tokens: each bread is a circle on the scoresheet, filled from the leftmost unmarked bread symbol, or alternatively below Thorin or Gandalf (you need not fill all the Dwarves first). So you are choosing which guest you plan to feed, not holding it back.
