Only one of each. You may hire any number of valets, lady's maids and footmen, but never a second Cook, Hall Boy, Head Housemaid or Useful Man. A Useful Man used up to refresh the market or find a tile is gone and cannot be replaced, and no longer counts toward servant objectives. All other servants, Upstairs, Downstairs ones included, count for servant-count objectives.
