If a Damage Card moves me next to more Minions, do I take extra damage?

No. The number of Damage Cards is fixed when you count adjacent Minions at the start of your damage step. Being moved next to new Minions adds nothing, and moving away from some does not reduce it. Only terrain such as lava or Spike Walls that a card moves you into adds fresh damage.
