If lava or a Spike Wall hurts me while I'm resolving minion damage, when is the new damage drawn?

Immediately. Lava and Spike Wall damage are the exception to the normal ordering: you draw and resolve the new card at once, interrupting the minion damage cards still waiting, which are then resolved in order.
