Does Fuel Tank block one damage card or all of the damage from an attack?

All of it. Detonating a Fuel Tank cancels everything you would take from that occasion (all adjacent Minions, the Boss, lava or spikes), even though the card's wording sounds like a single card. The one exception: Corki's Barrel Roll still leaves you taking lava damage if you roll into lava.
