If my hand size increases mid-draw, do I keep drawing to the new hand size?
The official Rules Reference says a player draws one card at a time, checking after each card whether they are at their hand size.

Yes. Draw until your hand equals the current hand size, so a hand size increase during drawing (such as from Star-Lord's helmet) is applied.
