Do bonuses for gaining a given adventurer fire when I choose that type from an 'any adventurer' space?
Yes. If an action lets you choose an adventurer and you pick the matching type, you gain that type as part of the action, so the Plot Quest triggers (Bolster Griffon Cavalry on a Fighter, Produce a Miracle for the Masses on a Cleric). It still fires only once per action.
