The rulebook's pick-up-or-leave rule gives exactly one Assistant per place per player.

No. A place holds at most one of your Assistants: if one is there you collect it, otherwise you leave one. The only exception is the neutral-Assistant variant, where a neutral Assistant may sit alongside yours. A card that makes you stay put still obeys this: you collect the Assistant already there.
