Istanbul
Can I pick up the Assistant from my current place before I move off it?
The movement phase comes before any pick-up in the rulebook.

No. You move first and only then pick up or leave an Assistant on the place where you end. The only ways to recover an Assistant from elsewhere are the yellow Mosque tile or a bonus card that returns one to your stack, and those do not give you an action on the place where the Assistant was.
