What happens when I must draw from an age pile that is empty?

Draw from the next higher age that still has cards, repeating upward until one has a card; you never go down. This applies to Draw actions, free sharing draws, and every dogma draw (including draw-and-score, draw-and-meld and draw-and-tuck). If a draw would pass age 10, the game ends.
