How is coffee paid for when a house buys it at my shop but eats at an opponent's restaurant?

Coffee is paid like any food or drink item: the unit price, doubled by a garden on the house, plus the coffee shop owner's own employee bonuses. The restaurant owner's employees add nothing to the coffee payment. If a route passes two of your shops but you have one coffee, that coffee sells.
