If an Estate inherits Fortress or Catacombs, do its when-trashed abilities resolve when you trash the Estate?

Yes. The when-trashed ability is set up while the Estate is still yours and resolves after the trash. With Fortress, the Fortress returns the Estate to your hand, where it counts as yours again.
