Crokinole
How do you play Crokinole with three players?
The rulebook gives two three-player options.

Either play two against one, with the pair splitting one set and sitting opposite, or use a purchased third disc set with everyone alone and score by match play: 2 points for first, 1 for second, 0 for third, to 8. Ties follow the rulebook's tie rules.
