Does El Gringo's ability still work if the hit kills him?

Yes — the attacker still takes an arrow, even if El Gringo lost his last life point, and that arrow can in turn eliminate the Sheriff. It applies once per attack no matter how many life points he lost, and never to Indian or Dynamite damage.
