Can a die I kept on one roll be re-rolled on the next?
The rulebook says that on a re-roll you may re-roll dice you earlier chose to keep.

Yes — each re-roll lets you choose any dice to re-roll, including ones you kept before. The only dice you cannot re-roll are Dynamite (unless you are Black Jack and fewer than three show), and on the third roll you keep everything.
