Do I draw replacement cards or get more occupations and minor improvements during the game?
The rulebook says you draw no additional cards during the game.

No — you play only the 7 occupations and 7 minor improvements you were dealt at the start. The exceptions are minor improvements passed to you by other players, a rare card that grants extra cards (such as the Broom), and the 3-for-1 card exchange variant.
